Stevia is a very low calorie natural sweetener. The sweet taste is not due to carbohydrate-based molecules, but to several non-caloric molecules called glycosides. The main glycoside molecule isolated from stevia is called stevioside. The best quality leaves are about 12% to 13% stevioside.
